SUBSTANCE: invention is related to the field of food industry and may be used in production of fermented products, and also in microbiological industry. Method for yeast activation includes introduction of aqua-complex compound of copper and succinic acid into nutrient medium for cultivation of yeast, and molecular formula of this compound includes central ion of copper, 2 labile molecules of water and 2 ligands (succinic acid), in concentration of 0.02-0.04 mg/dm3.
EFFECT: intensification, stabilisation and cost reduction of fermentation process by 10-15%; production of fermentation product with improved organoleptic parameters.
