FIELD: food industry, in particular, beet-sugar processing. SUBSTANCE: method involves cleaning of root crops and broken pieces of beet from impurities, separation of broken pieces of beet from root crops and their cleaning from light and heavy impurities. Root crops are washed and sliced. Fraction with size of 20-50 mm is separated from mass of beet broken pieces and sliced, and then mixed with beet slices. Extraction of sliced mass is conducted by water in diffusion apparatus with withdrawing diffusion juice from it. Separated fraction of beet broken pieces is crushed in roller crusher by crushing up to forming of plates of 0.5-3.0 mm thick. Cell fluid separated in the process of crushing is mixed with diffusion juice or used as coagulant. EFFECT: reduced sugar losses in pulp and improved quality of juice. 2 ex
