FIELD: food-processing industry. SUBSTANCE: method involves double-staged effective component extraction operation: at first stage, components are extracted from uncrushed raw fruit material by water counterflow at mixture temperature of 80-100 C for 1.0-4.0 h and first juice is produced; at second stage, obtained extract-raw material is separated from extragent. Second juice obtained from extract-raw material is released by thermomechanical treatment of layer having initial thickness of 100-300 mm and temperature of 90-100 C. The layer is subjected to the action of pressure of 0.01-0.02 MPa for 0.3-5 min. Apparatus has washing device for preparing raw fruit material, diffuser for extracting first juice from raw fruit material, press for thermomechanical squeezing of second juice from extract-raw material, first juice filter, collector for first filtered juice, vacuum evaporator for first juice saturation, second juice filter 8, collector for second filtered juice, unit for producing jelly-like mass. Such construction allows effective components to be completely extracted from raw fruit material. EFFECT: increased efficiency, simplified method and construction. 5 cl, 1 dwg, 1 tbl
