FIELD: food industry, in particular, technology of preparing cold-smoking and sun-dried fish. SUBSTANCE: method involves treatment of fish with antioxidant in the process of mixed salting, where special mixture is used instead of salt for strewing the fish. The mixture is prepared by preliminary adding to salt 5-50-% alcoholic extract from pericarps of English walnut, mixing and drying it in the air at temperature 18-20 C.
