FIELD: fishing industry, inspection of quality of fish and fish products. SUBSTANCE: fish is cut for fillet, water extraction is prepared, temperature of substance to be analyzed is measured with the aid of mercury thermometer, conductometric cell is filled with extract or stuffing with maximum interelectrode distance and resistance of cell is measured with maximum interelectrode distance. Similar operations are carried out at various interelectrode distances. Value of polarization resistance determined by polarization effects as well as sought-for specific resistance of object of test are determined with the aid of dependence of resistance of cell as function from interelectrode distance. EFFECT: increased precision of inspection of quality of fish and fish products thanks to calibration of device with standard substances and avoidance of errors in analysis because of distinction of electric properties of standard and analyzed substances and to accounting in qualitative relation of measurement errors caused by electrochemical processes. 3 tbl
