FIELD: fish industry. SUBSTANCE: head of fish is cut off along with chest fins perpendicularly to center bone. Three pieces not more than 50 mm high are cut from near-the-head, middle and tail parts of fish body in parallel to the above-indicated shear. Pieces to be examined are positioned with shear under indenter, and measurements are performed on open surface of specimen at distance of at least 5 mm from edge and at such distance from one another that deformed part of surface is beyond measurement zone.
