FIELD: fish industry. SUBSTANCE: raw or chilled fish is washed in sweet or sea water with 0.01-0.05% of catamin АБ for 5-20 min and rinsed with drinking water. Used as cold carrier is water solution of calcium chloride with density 1.255 g/cu.cm and concentration 27-0.5% at 15 C. It is cooled up to temperature minus 25-50 C for fish freezing up to temperature in fish body not higher than minus 18 C. After it, fish is rinsed with sweet water. Fish washing in solution of catamin before freezing reduces level of bacterial seeding of fish. EFFECT: higher efficiency.
