FIELD: pectin production, more particularly production of foodstuffs intended for prophylactic and medical purposes, pharmacology, medicine, fragrance and cosmetic industries. SUBSTANCE: stock is ready for hydrolysis extraction process by treating ground sunflower calathides with pectolytic enzymic agent having concentration of 0.1-0.3% based on dry stock weight for 30-60 min at temperature of 38-45 C.
