FIELD: food-production industry. SUBSTANCE: concentrate represents dehydrated tubers of Jerusalem artichoke with content of carbohydrates equal to 35-90%, proteins up to 7%, and water 14%. Novel product is characterized by high content of micro and macro elements of silicon, potassium, phosphorus, and magnesium. This allows for application of aforesaid product in various forms for example as biologically-active additive to food-stuffs, as base or component of food products and also as primary material for production of inulin for use in biotechnological, medicine, cosmetics and pharmaceutical industry.
