FIELD: food-stuff production industry. SUBSTANCE: method can be used in production of beer, wines, kvass, other products of fermentation, and also of other solutions which create negatively charged sediments. Used in function of filter partition is porous ceramic material consisting of quartz sand fibers and possessing natural negative electrostatic charge. For filtration, created is pressure differential equal to 0.2.10 to 2.0.10 Pa. At this pressure differential, formed in fermentation products is sediment containing negatively charged particles. In result of interaction of negatively charged sediment layer and negatively charged filtering surface, occurring is electrostatic repulsion force which prevents approaching of particles towards partition. Particles can not penetrate into pores of partition. Layer of sediment as if hanging above partition being in dynamic equilibrium and is easily removed when the equilibrium is disturbed for example in case of discontinued removal of filtrate. At continuous filtering flow along filtering surface, speed of flow is not over 0.1-0.5 m/s so as to avoid washing-out of layer being created. Used in process are practically non-clogging filtering partitions and it leads to saving filtering material, cutting of production waste and reducing filtering cost.
