FIELD: sugar industry. SUBSTANCE: diffusion juice is heated to 85-88 C and first step of progressive predefecation is carried out with lime milk to pH of 10.5-10.8 at lime consumption of 0.12-0.16% of CaO to sugar compound for 1-3 minutes. Predefecation juice is maintained in maturing tank for 4- 6 minutes during gradula stirring to attain pH of 11.6- 11.8 at CaO consumption of 0.14-0.18% for 2-4 minutes. Solution of polygalacturonic acid in amount of 0.1-0.5% of dry matter of solution to weight of juice or solution soluble salt of three-base inorganic acid in amount of 0.2-0.6% of dry matter to weight of juice is added to predefecation juice for dehydration and packing of precipitate. Method makes it possible to improve sedimentation-filtration properties of precipitate of predefecation juice and quality of the purified juice. EFFECT: more efficient purification method. 4 ex
