FIELD: food industry. SUBSTANCE: method of production of foodstuff involves mixing formula components and addition of biologically active addition - an aqueous suspension of microorganisms of species Lactobacterium acidophilum. Microorganism suspension is prepared by their mixing with distilled or sterilized water at 15-40 C at the ratio = (0.1-0.6):(5-20), respectively, followed by exposition of the obtained mixture for 1-30 h to titer value 1 x 104 - 5 x 109 cells/ml. The mass ratio of formula components and an aqueous suspension is (4-20):(0.1-8). The proposed method ensures to increase the storage time of foodstuffs at the total increase of their biological and organoleptic properties, decrease the product exhibiting high consumption properties and the long storage time with pathogenic microflora pollution.
