FIELD: sugar industry. SUBSTANCE: process includes: preparation of saccharose solution, filtration, hydrolysis of saccharose into invert sugar, neutralization of hydrolysate, and filtration. Hydrolysis is effected with hydrochloric and citric acids: first, hydrochloric acid is added and then, 10-20 min later, citric acid, their weight ratio varying from 1:1 to 1:1.5. Filtered invert syrup is purified by adsorbent and concentrated. Concentrated syrup is further stored or crystallized. In the latter case, crystalline glucose and fructose seed is used, which converts syrup into loose mixture, and crystallization process is carried out by blowing air preheated to 50-80 C through mixture to dehydrate and grow crystals at stirring. Product is finally dried with air flow at 30-50 C and relative humidity <30%. EFFECT: improved quality of prepared syrup and enabled converting thereof into crystalline loose form. 2 cl
