FIELD: agriculture. SUBSTANCE: method involves mixing milk with 3-4% of water treated to potable water state; spraying produced mixture in evaporator reservoir by means of spraying nozzle positioned in upper part of evaporator reservoir; maintaining residual pressure of 4-7 tor in evaporator reservoir. Lower part of evaporator reservoir is communicated with milk pump. Apparatus has vacuum pump connected at one side with evaporator reservoir through connecting pipe via condenser and at other side with ejector. Ejector water channel is connected to water tank and water pump. Evaporator reservoir has water jacket connected through valves with water pump and natural cold source. Method and apparatus of such construction allow intensive cooling of milk to be provided at any season. EFFECT: increased efficiency, reliable and intensive cooling without deterioration of milk quality and consistency, reduced material usage and enhanced reliability in operation. 5 cl, 1 dwg
