FIELD: physico-chemical processes. SUBSTANCE: invention relates to method of cooling aqueous solution of aspartame and crystallizing aspartame therefrom avoiding tubulization in aqueous crystallization system. Method includes: (i) feeding hot aqueous aspartame solution into drop-dispersing device; (ii) dispersing drops into water-immiscible liquid at temperature by at least 20 C lower to avoid formation of crystallization sites in drops during passage of drops through water-immiscible liquid; (iii) cooling the latter in order to cool the drops sufficiently well for achieving initial supersaturation of aspartame inside a drop within a factor range between 1 and 6, preferably between 1.2 and 4; (iv) collecting cooled drops for crystallization of aspartame; and (v) providing enough time to perform crystallization.
