FIELD: chemical industry. SUBSTANCE: described is method of preparing sucralose which comprises deacylation of sucralose 6-ether. Mixture of (a) 6-0-acyl-4,1'-6'- trichloro-4,1',6'-trideoxyhalactosaccharose, (b) salt comprising alkali or alkaline-earth metal chloride, (c) water and (d) other saccharose chlorination by-products are treated in reaction medium containing tertiary amide. Said treatment comprises (i) deacylation of 6-0-acyl- 4,1',6'-trichloro-4,1',6'-trideoxyhalactosaccharose by raising pH of aqueous solution (a), (b), (c) and (d) to about 11 (+1) at temperature and for period of time sufficient for carrying out said deacylation to produce sucralose-containing aqueous solution, salt comprising alkali or alkaline-earth metal chloride and other saccharose chlorination by-products in reaction medium containing tertiary amide, (ii) removing said tertiary amide and (iii) isolating sucralose from product of stage (ii).
