FIELD: food industry. SUBSTANCE: knife is used for meat chopping. Chopper knife 1 has crescent- shaped blade and hole 2 for setting on shaft. Knife is sectional, and it consists of external 3, 6 and internal plates fitted tightly and following the contour of one another. Plates are of identical thickness h multiple of knife common thickness H. Plates form cutting plane 8 on crescent-shaped surface 7 of knife 1 with common slope angle α. They are interconnected along contour by means of countersunk-head rivets 9. External plates 3, 6 are made of steel with HRA hardness of 75-77 and impact strength of 19-25 J/sq.cm. Internal plates are manufacture of steel with HRA hardness of 50-52 and impact strength of 85-95 J/sq.cm. EFFECT: enhanced longevity of knife. 2 dwg
