FIELD: determination of foam- forming properties of liquid. SUBSTANCE: method includes supply of gas into some quantity of substantially degassed liquid to form froth and analysis of one or more properties of froth. Gas is supplied through grid provided with holes of 25-100 μm in diameter. Holes are arranged at distances exceeding diameter of holes by factor of 5- 15 times. Process of froth formation in beer provides for supply of CO2 into beer through grid with same parameters. EFFECT: formation of froth with optimum distribution of bubbles by size. 7 cl, 4 dwg
