FIELD: biotechnology. SUBSTANCE: nucleus material is mixed with an aqueous medium containing natural nutrient polymer. Prepared mixture is treated under pressure from 15 000 to 200 000 pounds per square inch (from 103 410 to 1 378 800 kPa) at temperature from 0 to 100 C up to preparing the gel matrix containing the nucleus material placed into capsules made of the natural nutrient polymer followed by drying. Nucleus material has aromatic principle, dye, vitamin, mineral, spice, oil or pharmaceutical preparation. Polymeric material used for encapsulation has whey protein, casein, gelatin, human blood serum protein, egg protein, soybean protein, pectin or carboxymethylcellulose. Amount of nucleus material in mixture with an aqueous polymeric medium is from 0.5 to 15 wt.-% of total mass of mixture. Amount of polymer in an aqueous polymeric medium is from 1 to 50 wt.-% of total mass of an aqueous polymeric medium. The novel method of encapsulation enhances stability of UV-sensitive, light, oxygen, humidity, temperature, vitamins and food additions alternations.
