FIELD: fermentative hydrolysis of substances, particularly, protein substances. SUBSTANCE: method includes hydrolysis of a protein substance of vegetable origin by a proteolytic ferment preparation for producing hydrolytic substrate. Prepared hydrolytic substrate is heated at temperature and during the time sufficient for producing a substrate without mesophyll microorganisms and spores. Hydrolysis of the hydrolytic substrate without mesophyll microorganisms and spores is conducted in a sterilized system by sterilized ferment preparation.
