FIELD: fat-and-oil industry. SUBSTANCE: mayonnaise production line has aqueous-milk phase preparing unit, vinegar-salt solution preparing unit, mustard powder preparing mixer, emulsifier solution preparing unit, homogenizer and emulsifier preparing unit. The latter has mixer for preliminary preparing of emulsifier solution and mixer for final preparing of emulsifier solution. Final emulsifier solution preparing mixer has stator with rotary electromagnetic field excitation windings and rotor positioned inside stator. Homogenizer has stator with rotary electromagnetic field excitation windings and rotor positioned inside stator. Stator and rotor are enclosed in casings of magnetically permeable material. Corrugations on inner surface of stator casing and outer surface of rotor casing are made in the form of rectangular parallelepipeds. Gap between stator and rotor corrugations is 0.2-1.0 mm. Stator and rotor are arranged one with respect to the other so that magnetic flux intersect annular gap. Processing line allows high-fat, average-fat and low-fat mayonnaise with increased oxidation resistance to be produced. EFFECT: improved quality and increased storage time of product. 3 dwg, 1 tbl
