FIELD: leather industry. SUBSTANCE: in order to extract collagen, dehydrated offal cuttings are washed for 60-65 min in running water, desalted by 0.1-0.5% sulfuric acid solution and subjected to hydrothermal treatment in 2-3% hydrogen peroxide solution at 98-99 C. After that, offal is subjected to liming with 2.0-2,5% sodium hydroxide solution (8-10 h), rewashed in running water (60-65 min), and neutralized with ice acetic acid to pH 7.0. Resulting product is minced through meat grinder and homogenized to pasty condition.
