SUBSTANCE: method for processing cattle skins to obtain a collagen-containing material for food purposes includes trimming, grinding, washing, where non-dehaired, non-scraped, non-split hides of cattle are used as raw materials. After trimming the hides, the raw material is crushed into pieces not larger than 2×2 cm, crushed raw materials are mixed with hot water, heated to 70°C with steam supply, then decanting or hot pressing is performed to separate the water-fat mixture, after which the raw materials are washed and processed by the peroxide-alkali method without the use of sulphides and surfactants in combination with mechanical processing, then the raw materials are washed and neutralized with a food acid solution, after which they are washed and dried in a pneumatic dryer, then finally crushed.

EFFECT: invention makes it possible to increase the efficiency of obtaining a product, reduce the duration of the technological cycle, reduce the consumption of reagents and obtain a product of the required quality.
