FIELD: food industry.

SUBSTANCE: invention relates to food industry. Method includes crushing and washing collagen-containing raw materials in form of split leather or section of cattle hide. Alkaline-salt treatment and washing is carried out. Further, chemical treatment is carried out with a solution containing 3 % solution of NaOH, 2 % solution of Na₃PO₄ and 3 % solution of H₂O₂ to raw material weight = 1.5-2.0. Treatment is continued for 7-12 hours while stirring constantly and maintaining solution pH 11.5-12.5. Flow washing of raw material is carried out to pH 8-7. Treatment is carried out with diluted 15 % hydrochloric acid solution by adding hydrochloric acid solution to maintain pH of solution in range of 3.6-4.2, treatment is carried out for 6-7 hours. For 5-6 hours pH of hydrochloric acid solution is maintained within range of 2.0-2.4 to achieve pH of cut stock of 6.0-6.5. Raw material is ground and dried.
