FIELD: cheese-making devices. SUBSTANCE: cheese-making unit includes vertical cylindrical bath with heat-insulated side walls, bath is supported by uprights; one of them is adjustable in height due to hydraulic cylinder. Cutting-and-mixing mechanism includes electric motor with frequency converter, step-down and planetary reduction gears. Planetary reducing gear has stopped central wheel and revolving housing. Two output shafts of planetary reduction gear are mounted in one line at similar distance from center; they rotate in opposite directions. Secured t these shafts are two inclined levers provided with different arms and bushes at free ends. Axes of bushes are parallel relative to axis of bath; bushes are used for receiving the technological tools. Technological tools are multi-purpose: during rotation to one side they perform mixing and during rotation in opposite direction, they perform cutting the cheese clot. Changeable technological tools such as string or knife frames or bladed mixers may be also arranged in bushes. Multi- purpose tool is made in form of axle with frame in form of contour with knives sharpened to one side and with row of vertical knives whose section has form of oblong trapezium whose lesser base is engageable with triangle or is rounded-off. Beside that, cheese-making unit is provided with additional device for taking whey. EFFECT: quality of product due to increased volume of mixing. 10 dwg
