FIELD: food-processing industry, in particular, cheese making equipment. SUBSTANCE: apparatus has receiving vessel with drain opening in its bottom, hollow through shells having uniform section and joined to vessel bottom in axial alignment with drain openings of vessel and cheese molds. Receiving vessel, shells and cheese molds are arranged in tiers. Apparatus is further provided with milk, water and component supply pipelines and fittings and whey discharge pipelines. Inner surface of each shell serves guide for piston, which is fastened in combination with pressing device on stem. Each stem is fixed on movable platform and upper part of each stem serves rotary shaft of cutting and mixing device. Drive for rotation of cutting and mixing device is disposed on movable platform, which is provided with reciprocation drive. Such construction allows number of actuating mechanisms for transfer of product to tiers, as well as product processing mechanisms to be reduced, and cheese heads of equal weight and content to be produced.
