FIELD: purification of gas/steam from undesirable or contaminating substances. SUBSTANCE: method involves directing contaminated gas or steam flow downward through layer of twisted distributing medium placed between gas or steam inlet and outlet ends, with gas or steam flow rate through mentioned layer being less that flow rate through inlet end; separating undesirable or contaminating substances from gas or steam as it flows through mentioned layer, with undesirable or contaminating substances dropping from separating medium; discharging purified gas or steam from mentioned layer and directing it through portion of separating medium at flow rate less than that of gas or steam flowing through mentioned layer; providing accumulation of excessive undesirable or contaminating substances on separation zone bottom. Separation apparatus has reservoir enclosing separation zone, inlet end, outlet end, separating device containing layer of twisted separating medium placed in separating zone. Inlet end, separating device and outlet end are arranged so that contaminated gas or steam flow is passed through inlet end into separating zone and further downward through separating layer and portion of separating zone disposed below separating layer and with following discharge through outlet end. Gas or steam flow is purified while passing through twisted separating layer, which has larger section area than that of inlet end of reservoir. Contaminant accumulating zone is positioned within reservoir under twisted separating medium layer. Apparatus may be used in food cooking device having cooker, air entrapment zone for collecting oil and fat contained in air and released during cooking, air exhaust device and separating device.
