FIELD: chemical industry. SUBSTANCE: method comprises extracting vegetable raw materials with water in electric field, depositing pectin with ethanol and drying thereof. Extraction is carried out with water continuously treated with pulse electromagnetic field having variable component of 600-1200 Oe at 90-95 C for 1 h, solid fraction is subsequently washed at 45-70 C for 0.5 h and treated with the same pulse electromagnetic field. EFFECT: method makes it possible to increase yield of pectin, improve gelling and complexing power of pectin. 3 ex, 1 tbl
