FIELD: natural compounds. SUBSTANCE: invention relates to technology in production of beet pectin with high content of polyuronide component and free carboxyl groups. Method involves the complete dissolving squeezed out pectin coagulant using ethylenediaminetetraacetic acid disodium salt solution in concentration 0.05 N. Invention provides the enhancement of complex-forming capacity of pectin that results to possibility of pectin using as adsorption food supplement. Invention can be used in pharmaceutical and food industries in preparing foodstuffs using pectin as adsorbent. EFFECT: improved enhancing method, valuable properties of pectin.
