FIELD: food industry. SUBSTANCE: pectin-containing raw is milled, extracted with water by ultrasonic treatment at cavitational regime and solid phase is separated. Additionally, at cavitational regime alcoholic extraction of solid phase is carried out. Extraction is carried out by ultrasonic treatment at cavitational regime at radiation intensity 20-120 W/cm2, at frequency 10-100 kHz, at 70 C, not above, at hydromodulus raw : solvent = 1: 1, and at duration of each extraction stage 600 s, not above. Method is used for production alcoholic and nonalcoholic drinks and confectionery production. EFFECT: improved method of preparing. 3 tbl
