FIELD: food industry.

SUBSTANCE: invention relates to food industry and may be used in processing of vegetal raw materials. Method for production of pectin and cellulose involves preparation of pulp from granulated pulp of sugar beet by way of its soaking in water at temperature 30 ± 2 °C, hydrolysis-extraction of obtained pulp with water solution of succinic acid at pH 2, temperature 80 °C for 65 minutes in electromagnetic field with frequency of 29 Hz to produce pectin extract and spent pulp. Then the pectin extract is concentrated to 5 % pectin substances content, coagulated with 96 % ethanol for 10 minutes, the coagulate is washed twice with 80 % ethyl alcohol, delivered for infrared drying under vacuum at 0.06 MPa and 35 °C to pectin substances moisture content of not more than 7 %. Obtained pectin is ground to form powder with particle size of not more than 200 mcm. Spent pulp is washed twice with water, fed for infrared drying of pulp under vacuum at pressure 0.06 MPa and temperature 35 °C till moisture content is no more than 7 % to produce fiber, obtained fiber is ground to produce powder with particle size of not more than 200 mcm. Then one performs mechanical mixing of produced fiber and pectin substances at ratio from 1:0.05 to 1:0.5.

EFFECT: invention enables to obtain an end product with given qualitative composition and detoxification properties with respect to lead ions in non-waste processing of vegetable raw materials.
