FIELD: food-processing industry, in particular, milk industry. SUBSTANCE: method involves treating milk by normalizing, cleaning, pasteurizing or sterilizing and cooling processes; prior to pasteurizing or sterilizing processes, introducing iodine substrate solved in small amount of milk. Iodine substrate contains 150-200 mg of iodine adapted for iodizing of 1 t of product. Milk products are obtained by normalizing and cleaning milk, subjecting it to thermal treatment and cooling to leavening temperature and introducing leaven, with kind of leaven depending on kind of cultured milk product. Mixture is leavened and processed in accordance with process pattern for particular cultured milk product. Prior to thermal treatment, substrate containing 150-200 mg of potassium iodide solved in 100 g of milk is introduced into mixture for iodizing of 1 t of obtained product. Milk and milk products obtained by methods contain iodine in an amount of 12.5-17.5 mkg per 100 g of product to provide for endemic goiter and iodine deficiency collective prophylaxis of population.
