FIELD: dairy industry.
SUBSTANCE: disclosed is a method of producing a fermented milk product enriched with an essential microelement selenium, with pronounced antioxidant activity. Method envisages milk normalization in terms of fat content and purification, homogenisation, pasteurisation, cooling to a fermentation temperature of 40 °C, introduction of dry starter Lactobacillus Acidofillus and a solution of a selenium-containing nanoscale system in amount of 1.24 ml per 1 l of the finished product, which corresponds to 21 mcg of the essential trace element selenium per 1 l of the finished product, ripening, mixing of clot, cooling to temperature of 4-6 °C and bottling.
EFFECT: invention makes it possible to enrich fermented milk products with essential microelement with selenium and to increase antioxidant properties of fermented milk product.
