FIELD: food industry, microbiology. SUBSTANCE: invention relates to production of baking yeast enriched with trace elements. Method of production of iodinated yeast involves addition of the pressed yeast preliminary enriched with iodine in yeast cells as yeast substrate that is highly enriched with iodine to yeast milk in finishing stage of production of yeast. Baking yeast obtained by this method presents the technically pure culture of yeast saccharomycetes fungi that have organic bound iodine in the form of loaded cells distributed by yeast mass. Iodine content in yeast is 0.0008-0.0036 wt. -% by dry matter of yeast biomass. Invention can be used for prophylaxis of states associated with iodine deficiency.
