SUBSTANCE: claimed method includes milk purification, normalizing, homogenizing, pasteurization, cooling to fermentation temperature, introducing of 2-3 % cedar solvent cake and bifidobacterium ferment, fermentation for 4-5 h at acidity of 55-60°T.
EFFECT: increased amount of viable bifidobacterium ferment, target product of improved structural and mechanical properties enriched with microelements and food fibers.
