FIELD: food-processing industry. SUBSTANCE: method involves washing groats prior to feeding thereof into cooking chamber, with waste water being initially directed in closed cycle into filter and further into bubbler and washing chamber and fresh water being introduced before directing groats into bubbler; drying cooked groats with overheated steam in closed recirculation circuit and discharging excessive portion of overheated steam from recirculation circuit into cooking chamber; guiding waste saturated steam from cooking chamber into bubbler; measuring initial moisture content and consumption of basic groats at washing chamber inlet end, flow rate and temperature of saturated steam from cooking chamber into bubbler, flow rate and temperature of washing water at washing chamber inlet end, flow rate of excessive portion of overheated steam; stabilizing amount of washing water in closed cycle by regulating flow rate thereof rearward of filter through changing flow rate of fresh water in replenishment pipeline; stabilizing washing water temperature in recirculation pipeline at washing chamber inlet end by changing flow rate thereof through altering pump drive power; determining by flow rate and temperature of washing water the heat flux introduced by washing water into washing chamber; according to heat flux, setting required amount of basic groats to be fed into washing chamber and correcting this amount in accordance with current value of groats moisture content at washing chamber outlet end; determining flow rate of overheated steam discharged from recirculation circuit into cooking chamber by current values of moisture content in groats after discharge thereof from cooking chamber and drying chamber; setting flow rate of sprayed liquid by ratio of flow rate of excessive portion of overheated steam and amount of groats into cooking chamber, with moisture content of groats being taken into account; stabilizing final moisture content of groats.
