FIELD: alcoholic beverage industry. SUBSTANCE: proposed vodka "Polevaya Special" is prepared by mixing of rectified alcohol of the highest purification and softened water with total hardness from 1.5 to 3.5 mole/cu.m in terms of preparation vodka with 50-% strength. Prepared solution is treated by egg powder and fat-free acid curd. For preparation of a suspension, egg powder is preliminarily drained by warm softened water with temperature of 40-45 C, mixed and leave for swelling for 2-3 h. Then the solution and fat-free acid curd are introduced. After introduction of sorbents, the solution is mixed and settled for 12-18 h. Settled solution is filtered on a pressure filter, 65.8-% sugar syrup is introduced in it, and mixture is directed to carbon columns for cleaning, and then to a finishing tank. Alcoholic solution of vanillin (1:100) is added to the finishing tank. Residues, formed after clarification, are directed to evaporation for alcohol preparation. Content of the finishing tank is mixed, strength is corrected, if necessary, and directed to bottling with obligatory control filtration. Prepared vodka contains the following ingredients per 1000 dal: egg powder, 3.8-4.2 kg; fat-free acid curd, 0.2-0.4 kg; 65.8-% sugar syrup, 13-14 l; alcoholic solution of vanillin (1:100), 0.2-0.4 l; ethyl rectified alcohol and softened potable water with hardness from 1.5 to 3.5 mole/cu.m. the balance, up to 50-% strength. EFFECT: increased vodka stability at storage life; reduced cost price and alcohol losses; improved organoleptical properties.
