FIELD: baking industry. SUBSTANCE: baking oven has tunnel-type baking chamber, conveyor plate with working and idle runs, and heating system. Heating system has combustion chamber, main upper and lower U-shaped channels composed of bundles of heating tubes for directing medium in forward flow and countercurrent flow with respect to advancement direction of working run of conveyor plate. These tubes are connected with their inlet ends respectively to upper and lower distributing collectors so that forward flow bundle of heating tubes is arranged closer to conveyor plate than countercurrent flow bundle of heating tubes. Baking oven has main supplying and discharge gas ducts and recirculation fan, as well as auxiliary upper and lower U-shaped channels connected to respective distributing collectors in the manner similar to that of main U-shaped channels. Baking oven is further equipped with auxiliary gas supplying and discharge gas ducts. All of supplying gas ducts are connected to combustion chamber through dispensing device and discharge gas ducts are connected to recirculation fan. Such construction provides for precise adjustment of heat supplied to each zone of baking chamber and allows optimal temperature mode to be created for various kinds of bakery products and fast readjustment of equipment and mode to be effectuated when changing from one kind of bakery product to another.
