FIELD: meat industry, particularly, technology of preparing minced meat products with application of additives enriched with physiologically active substances. SUBSTANCE: method involves preparation, mincing and brining of raw material, preparation, forming and heat treatment of minced meat. Additionally introduced in minced meat is collagen half-finished product in amount of 5-25% to its mass prepared from offals of beef trimming or offals of gut raw material treated with ferment preparations of megatherine and liporesine, and also potato in amount of 2-3% to minced meat mass. The method increases functional possibilities of rarely used low-grade collagen-containing raw material of meat industry for food purposes.
