FIELD: technology for preparation of collagen mass from collagen-containing meat offals for using them in production of edible casings. SUBSTANCE: method involves heating the initial raw material in the presence of water at liquid coefficient 1:2 and then its treating with proteolytic enzyme preparation. Additionally used is enzyme preparation of lipolytic action such as liporisine ГЗх from Rhizopus oryzae culture in amount of 1.0-3.0% to mass of raw material. Used as proteolytic enzyme preparation is megaterine from Bacillus megaretium culture in the amount of 0.10-0.15% to raw material mass. Treatment with enzyme preparations are carried out at temperature 37-40 C for 2.5-3.0 h. Before it, preliminary treatment is carried out by ultrasound with vibration frequency of 16-20 kHz for 5-10 min. EFFECT: higher efficiency. 4 cl, 6 dwg, 9 tbl
