FIELD: food-processing industry. SUBSTANCE: meat grinder has feeding screw, rotary knife, immovable grid, replaceable head with active working tool driven for rotation by meat grinder screw. Connecting member is positioned on outlet end of feeding screw shaft extending from feeding screw and is made in the form of slot for joining active head member. Shear grid is provided with discontinuous annular bead extending along outer perimeter of external surface and provided with projections, which are inserted into head casing cuts upon assembling of apparatus to fix it against sliding during operation. Connecting member at outlet end of feeding screw shaft may be made in the form of slot formed on pin of shaft, which projects beyond outer surface of shear grid by distance of 0.5-1.5 the diameter of shaft. Head active member may be equipped with axial channel having transverse pin or protrusion. EFFECT: increased efficiency and wider operational capabilities. 2 cl, 4 dwg
