FIELD: methods of determination of moisture content in food-stuff. SUBSTANCE: basic parameter for determination of moisture content in food-stuff is difference of pressures of steam-and-gas mixture above product in weighing bottle and residual pressure in vacuum chamber where weighing bottle is kept. Device for determination of moisture content in food-stuff includes vacuum chamber with weighing bottle and lapped cover which is placed in hermetic chamber. Weighing bottle is kept in vacuum chamber in vertical position for transmission of translational motion to armature of electromagnetic converter converting linear displacement of armature into digital signals. Weighing bottle has cover at height-to-inner diameter ratio of H/D≥0,5; lateral surfaces inside cover and outside weighing bottle are polished and lapped. EFFECT: intensification of determination of moisture content in food-stuff without drying; reduced time taken by process. 3 cl, 6 dwg
