FIELD: flour-milling and groat industry, particularly, production of wheat germinal flakes. SUBSTANCE: method involves wheat cleaning. Then conducted are milling at humidity of wheat germinal flakes 11.8-12%, grinding and abrading of endosperm up to 0.1-0.3 mc, its rolling with the following enrichment of flakes up to 80-90% by means of bolting. After it, sterilization of flakes is carried out by irradiation with infrared rays in wave range of 0.9-2.9 mc, and ultraviolet rays in wave range of 255-257 nm for 40-90 s at temperature of wheat germinal flakes of 72-80 C. Then drying is carried out at air temperature of 90-95 C for 40-90 s, at layer thickness of 1-2 cm and cooling up to 25-18 C, while flakes humidity is taken up to 6.9-7.0%.
