SUBSTANCE: in the method for producing wheat and amaranth flour, the initial raw materials are first cleaned, then a mill mix is composed from the prepared wheat grain and amaranth grain in the ratios 1:1, 3:2, 3.5:1.5 and 4:1. The wheat grain prior to grinding is pre-moistened to a moisture content of up to 16 to 16.5% and conditioned for 12 to 14 hours, followed by adding amaranth grain to the prepared wheat grain. The finished wheat and amaranth grain mixture is ground on roller machines with fluted rollers with the flutes arranged back to back (b/b), with a rotation speed of the fast roller from 4.0 to 5.0 m/s, with the ratio of circular speeds of fast and slow rotating rollers from 1.5 to 2.5, with the fluting density of the rollers from 7 to 9 pieces per 1 cm, with a slope of the flutes from 7 to 9%, followed by sorting the grinding product on sieves of various sizes.
EFFECT: invention provides a possibility of developing an effective technology for joint processing of wheat and amaranth grain, improving the consumer properties and the range of finished products by using the products of processing the grain wheat and triticale mill mix in the baking and confectionery industry.
