FIELD: dairy industry. SUBSTANCE: composition contains milk or skimmed milk, emulsifier, milk cream, as a fat component with fattiness of 25-45% and thickening agent. Prepared mixture is heated up to 35-80 C, homogenized, fresh cheese is added, and said mixture is whipped. Composition has density from 265 to 440 g/l. Vegetable fat may be added in heated or skimmed milk. Said composition may contain sugar or salt, and also flavorings. The invention allows to prepare product with light structure which may store at temperature of freezing or frozen, or may be subjected to cycles of cooling-freezing remaining cream and stable.
