FIELD: food industry, particularly, production of fish products. SUBSTANCE: after chopping on chopper minced fish, rapan meat, blanched rice, fresh onion and carrot, common salt and bitter black pepper, they are cut with simultaneous introduction of hen's eggs, vegetable oil and gas-and-liquid extract of biomass of microorganisms selected from groups of Mortierella, Saprolegnia, and Pythium. Then small balls are molded from prepared mass. EFFECT: preparation of fish small balls with improved organoleptical properties, more balanced composition of nourishing substances, and increased quantity of biologically active substances.
