FIELD: food-processing industry. SUBSTANCE: method involves grinding in grinder solid receipt components including fish farce, wheat bread, solid fats, bulb onion, edible salt, semolina, dried milk, egg powder, Guizotia flour, carrot, preparation obtained from lipid-synthesizing microorganism biomass by predetermined process, said microorganisms being selected from certain group, apricot, and sugar; cutting said components while adding liquid fats and water-emulsified or fish bouillon-emulsified gas-liquid extracts of black, sweet and red pepper, nutmeg, and cloves; forming cutlets from resultant mixture and dusting cutlets. EFFECT: provision for obtaining product with improved organoleptical properties, more balanced composition of nutritive substances, and increased content of biologically active substances.
