FIELD: food industry. SUBSTANCE: invention relates to manufacture of bakery products intended for prophylactic and therapeutic diet. Method comprises preparation of nutritive medium for activation and addition of disintegrated compacted yeast. Nutritive medium is prepared by mixing flour, water, and powdered grape seeds. The latter are reduced in two steps: seeds are first crushed and then finely reduced in film 0.1-2.0 mm thick at 25-35 C and flow velocity 0.1-0.2 m/s. Flour/water/ grape powder ratio varies between 1.0 : 4.0 : 0.2 and 1.0: 2.5 : 0.6. Mixture is ripened for 30-40 min at 30-32 C.
