FIELD: baking industry.
SUBSTANCE: invention can be used in producing baked goods designated for prophylactic nutrition. Method involves preparing the nutrient medium for activation, addition of milled pressed yeast to the nutrient medium to obtain a mixture and keeping the mixture. The nutrient medium is prepared by mixing flour, water and powder prepared of tomato husks obtained by milling tomato husks in thin spirally rotating film with thickness 0.1-0.5 mm, under pressure 200-250 kg/cm3 and temperature 20-30oC. The ratio flour - water - tomato husks powder = (1.0:2.5:0.2)-(1.0:4.0:0.6), respectively, and mixture is kept at temperature 30-32oC for 20-40 min. Method provides improving yeast quality due to increase of raising strength, reducing duration of technological process, enhancing quality and storage time of baked goods prepared by using such yeast.
