FIELD: food processing industry.
SUBSTANCE: invention is directed to bakery products intended for use as preventive food. Process comprises preparation of activating nutrient medium, placing disintegrated compacted yeast into medium to form mixture, and incubation of this mixture at 30-32°C for 20-40 min. Nutrient medium is prepared by mixing flour, water, and lentil seed powder obtained by two-step breakage, in the first of which lentil seeds are crushed and, in the second step, finely reduced on spirally rotating film with thickness 0.1-0.5 mm at 30-35°C. Amount of lentil seed powder is 1-3% of the weight of wheat flour.
EFFECT: increased raising power of yeast, reduced process time, and improved quality of bakery products.
